This new three-credit class takes place on Wednesdays from June 27 through August 15 from 2-8 p.m. The class is open to LCC students and the public but an Oregon Food Handlers card is required.

Chef Clive Wanstall will lecture on food truck operations and engage students with hands-on experience in planning, promoting, setting-up, cooking, delivery, tear-down and cleanup of a food truck. After lab instruction, the truck will head to Cottage Grove’s Bohemia Park to serve the crowd at the city’s evening concert series.

Food trucks are a $2.7 billion industry, according to Food Truck Operator. “The past decade has witnessed the evolution of the modern food truck, creating a new convenient dining experience for millions of consumers and a business opportunity for thousands of entrepreneurs.”

The official course name and number is CA 199FT Food Truck Operations and the registration CRN is 11612.
