CA 120 Culinary Adventuring: Seasonal Baking and Pastry
CRN 42364
2 credits +$30 fee

This course is open to the public. It is designed to introduce students to the “rebirth” of regional cuisines and apply techniques in baking and pastry which reflect the local produce. Students will learn the history of seasonal fruits and vegetables and their local availability as well as Oregon agriculture and its organic and sustainable values. Holidays and cultural traditions are explored through seasonal recipes, and the local “flavor” is enhanced with studies of farms, markets, companies and restaurants that support sustainable cuisine. With guided, hands-on instruction, students will acquire the fundamentals of baking with this season’s fruits, vegetable, and herbs as well as prepare for the next season’s offerings. CA 121 Culinary Adventuring: The Composition of Cake

2 credits +$30 fee

Cake in all its glory has been a celebratory symbol of religious and social traditions in all cultures since the Egyptians.  Its history ranges from simple to the ornate and themed in endless variations like no other baking medium.  This class is designed to teach the classical fundamentals of baking and decorating cakes that taste great and look fabulous.  With the demand in the food service industry for experienced and skilled cake bakers and decorators, students will learn essential skills to advance in the workforce.  All components of making and decorating a cake will be covered such as cake layers, fillings, frostings, assembly, piping, and decoration.  Students will be introduced to working with specialty cake ingredients such as fondant and marzipan as well as become familiar with cake baking and decorating equipment.  With regard to Oregon's culinary "terroir,” this class will focus on using the finest in local, regional and organic products to support sustainability. CA 130 Culinary Adventuring: Oregon Wine Country

Meet the Winemakers of the Willamette Valley.  Classes feature a different winemaker each week. Learn about their winemaking techniques and taste their wines with food prepared by Lane’s culinary arts students. Instructor:  Joe McCully

HRTM 106 Introduction to Hospitality Management in Spanish

A general overview of hospitality management. Covers the growth and development, organization and structure, and all functional areas of the lodging and food service industry. Explains both management and operational functions of hospitality operations. Discusses the personal and professional demands of hospitality management, managing human resources and the future industry.

If you are looking for an affordable fine dining experience for lunch, try the Renaissance Room on Lane's main campus. Located at the east end of the first floor of the Center Building, this wonderful dining experience offers service for one or can accommodate special parties of up to 30. The food is prepared and served by our Culinary Arts students. The Renaissance Room is open Monday through Thursday, from 11:30 a.m. to 1:00 p.m. during fall, winter, and spring terms through the week before finals, with some exceptions. Menus change weekly. Reservations are suggested. Call 541-463-3533.

Gift certificates are available for purchase through the Culinary Arts and Hospitality Management office (541-463-3500 or bldg. 19 rm. 202).

Community Events/Service Opportunities:

Students will also have the opportunity to support their community by volunteering their time and talents to a variety of events. These events are fundraisers for different charities and offer students a way to give back to the local community.
